Hormone Happy Peppermint Mocha

Your average Peppermint Mocha from Starbucks is going to send you on a blood-sugar rollercoaster the whole day. THIS version will actually give you long-lasting energy, while keeping your glucose levels stable!! I choose 100% (no fillers) monkfruit because I don’t do well with sugar in the mornings, but on special occasions I might swap for a touch of maple syrup or honey!
Ingredient list
~1/2-1 cup of hot coffee (or 2 shots of espresso! I use organic decaf coffee)
~1/4-1/2 Nutpods Peppermint Mocha (or creamy coconut milk)
1 1/2 tablespoon organic cacao powder
100% Monkfruit/Steva (just a tad!) OR 1 tablespoon maple syrup/honey to taste
1/4 teaspoon Peppermint Extract
1 coop of collagen (I use Ancient Nutrition brand)
Optional: ~1 tablespoon coconut butter
Optional: ~1/2 teaspoon vanilla extract

BLENDER METHOD
First, prepare your coffee or espresso. Then warm the creamer/milk (I think warming it on the stove top is best!). Then add remaining ingredients. Blend until mixed and foamy! Pour on top of your prepared coffee.

Time for TOPPINGS! One of the best parts. Sprinkle with Dark Chocolate shavings and/or drizzle. I sprinkled some freeze dried raspberry for a touch of color, but you could also sprinkle with peppermint candy of any kind (I was avoiding the added sugar) or homemade coconut whipped cream is a delicious topping!
