Gut Healing Lemony Turkey Soup

Not only is this soup SO yummy and full of flavor — it’s also really healing for your gut! It’s full of gut healing AND hormone balancing herbs that will leave you and your body feeling happy, satiated, and healthy! <3
Ingredient list
3 tablespoon olive oil
2 cups onion, diced
1 cup carrot, diced
2 cups of celery
1 bunch of sturdy greens, such as kale, broccoli rabe, mustard greens or collard greens
2 tablespoon tomato paste
1 teaspoon ground cumin, plus more to taste
Shake of red-pepper flakes, plus more to taste
1 pound ground turkey
3 garlic cloves, minced
1 tablespoon finely grated fresh ginger (I used ginger people in the jar)
1 teaspoon Redmond salt, plus more to taste
1 quart chicken broth
2 (15-ounce) cans white beans, drained and rinsed (OPTIONAL: I left these out!)
1 cup chopped fresh, parsley, mint, cilantro and basil. The original recipe also suggests tarragon and chives
Fresh lemon juice, to taste PLUS I serve them on the side with the herbs (+ lemon zest on top!)

Steps
STOVE METHOD
Saute olive oil, carrots, onions, and celery until the onions are slightly golden brown. Add in your tomato paste, cumin, and red pepper flakes. Stir to incorporate.
Add ground turkey and salt, and cook until crumbled. Add in your white beans (or skip this step!) and broth and bring to a boil. Turn down to a simmer and add in your greens.
Squeeze lemon into the pot and serve your soup with a side of chopped parsley, basil, and cilantro and a bunch of lemon wedges.

I serve mine with dairy-free sour cream (my favorite is KiteHill Foods!), more cilantro, a squeeze of lemon, and some healthy hot sauce!
