Paleo Buffalo Spaghetti Squash Casserole

PALEO BUFFALO SPAGHETTI SQUASH CASSEROLE

You can catch me DRINKING the Buffalo Sauce from Primal Kitchen because it is THAT good!!! That is the star of the show in this delicious casserole recipe!

Spaghetti squash is one of my absolute faves, and you can’t beat how easy it is, either! Paired with the buffalo sauce from Primal Kitchen, and you have a meal that you won’t be able to get enough of! <3

Ingredient list

  • 2 cups organic pre-cooked chicken breast, shredded

  • 1 large (or 2 small) spaghetti squash, baked in “rings”

  • 2 tablespoons of olive oil

  • 1 large egg

  • 1/2 cup (or MORE!) Buffalo sauce from Primal Kitchen

  • Optional: Ranch from Primal Kitchen

  • Sea Salt (to taste)

  • 1/2 cup celery chopped/sliced

  • Green onion (for sprinkling)

Steps

Step 1

Preheat oven to 400 degrees Fahrenheit. Slice the ends off of the squash, and cut it into rings.

Step 2

After you’ve used a spoon to scrape out the seeds, place the squash on a lined baking sheet. Use your hands to coat each ring with a little olive oil and salt/pepper.

Step 3

Bake for 30-40 minutes, flipping the rings about half way.

Step 4

While the spaghetti squash is cooking, prepare the shredded chicken by boiling it on the stove for 10 minutes, cooking it in an instant pot, or buying an organic rotisserie chicken and shredding it in a mixer!

Step 5

When the spaghetti squash is done cooking, let it cool for about 15 minutes, then peel the skin away and separate the strands into long spaghetti noodles using a fork.

Step 6

In a medium bowl, mix together your olive oil, egg, and buffalo sauce until well incorporated.

In a large bowl, add in your cooked spaghetti squash and shredded chicken. Then add in your buffalo sauce mixture until it’s well combined.

Step 7

Stir in celery and any other add-ins. Pour contents in a greased 8x8 glass baking dish. Bake at 400 for ~25 minutes, or until starting to lightly brown on the edges. You can broil at the end to make it crispy if you want! ENJOY! :)
