Easy & Fluffy Paleo Protein Pancakes

What sets this pancake recipe apart from all the rest?! They are PACKED with protein, no-sugar-added and SO fluffy! It calls for 2 scoops of unflavored collagen from Primal Kitchen Foods, which helps keep your blood-sugar stable without altering the delicious taste!
Ingredient list
4 large eggs (separated yolk and whites)
2 ripe, medium bananas
1.5 cups of fine/blanched almond flour
1 teaspoon baking powder
2 scoops Primal Kitchen Foods unflavored collagen For the Filling
1/4 cup dates, finely chopped
1 tablespoon cinnamon
More honey for drizzling
Optional: 1 tablespoon coconut sugar or granulated monkfruit
Optional: 1/4 cup organic walnuts, finely chopped

Steps
Step 1
In a medium bowl, whisk together egg yolks, bananas, almond flour, Primal Kitchen Foods unflavored collagen, and baking powder.
Step 3
Gently fold the whipped egg whites into batter until evenly combined. (this makes it super fluffy!)
Step 4
Grease pan or pancake griddle with coconut oil and pour about 1/4 cup of batter onto the pan/griddle (make small pancakes!). Cook slowly until both sides are golden, and be sure to flip gently. Top with nut butter, fruit, real maple syrup, grain-free granola, etc., and ENJOY! :)
