Mini Cinnamon Rolls

For as long as I can remember, my family and I have always made cinnamon rolls on Christmas morning. Of course we’ve switched our tradition to this healthier recipe — one that is loved and looked forward to by all!!

This recipe targets:

Most people associate with cinnamon rolls being from a can, but they can be so much better and HEALTHIER than that! These are grain-free, dairy-free and have no refined sugar! Perfect for special occasions, or just a cozy Sunday morning!

Ingredient list

For the Dough

  • 2 tablespoons of coconut oil, melted (I use coconut oil from the Nutiva brand!)

  • 1 egg (can use a flax egg for vegan!)

  • 1-2 tablespoons of raw honey (or maple syrup for vegan!)

  • 1 teaspoon vanilla extract

  • 1 1/2 cups fine almond flour

  • 1 tablespoon coconut flour (I get mine from Bob’s Red Mill)

  • 1 teaspoon baking soda

  • Pinch of Salt!

For the Filling

  • 1/4 cup dates, finely chopped

  • 1 tablespoon cinnamon

  • More honey for drizzling

  • Optional: 1 tablespoon coconut sugar or granulated monkfruit

  • Optional: 1/4 cup organic walnuts, finely chopped


Frosting Options

  • Simple Mills store bought vanilla frosting (easy and delicious!)

  • Homemade “cream cheese” frosting

    • 2 tablespoons of vegan cream cheese from Kite Hill Foods

    • 2-3 tablespoons of sweetener (I use whole earth sweetener)

    • 2 tablespoons of Miyoko’s Creamery Vegan Butter

Steps

Step 1

First, you’ll want to whisk together your melted coconut oil, egg (or flax egg), honey, and vanilla in a medium sized bowl. Once this is well combined, add your almond flour, coconut flour, baking soda, and salt. Stir it up well until it’s well mixed!

Step 2

Transfer your dough onto a sheet of wax paper. Cover it with another sheet of wax paper, and roll the dough out into a longer rectangle. Once you’ve got your rectangle made, you can remove the top sheet of wax paper. Then, it’s time to fill them up! Drizzle the dough with honey and sprinkle the cinnamon. Top with the chopped walnuts (optional) and dates!

Step 3

After you’ve got your delicious filling on the dough, use the wax paper to roll the dough into a log. Place the log in the freezer for 15 minutes so that is can harden. Preheat the oven to 325 degrees while you’re waiting for the dough to

Step 4

Now that your dough is chilled, slice the log into individual pieces. I make mine into about 9 or 10 rolls. Place each roll onto a lined baking sheet. Bake for 10-12 minutes until golden brown. Once the rolls are golden, remove them from the oven and drizzle with glaze. Serve warm!

For the homemade “cream cheese” frosting:

  • Heat the “cream cheese” and “butter” in the microwave until it is soft.

  • Mix the softened cream cheese and butter with the sweetener of choice until it becomes a creamy icing

  • You can double or triple the amount of ingredients if you want/need more!
