Gingerbread Bites

GINGERBREAD BITES

I can really never get enough of these bite-sized sweet treats. They are SO easy, and so versatile, you can really make them full of any flavors you want! This gingerbread version is PERFECT for the holiday season!

My favorite part about these bite-sized goodies are that they are low-sugar, and can be made into NO-sugar treats, too! AKA the perfect treat for pre-workout energy boost, or dessert!

Ingredient list (MAKES 5-8)

  • 1/2 cup creamy almond butter

  • 1/2 tablespoon pure maple syrup (monkfruit or regular!)

  • 1/2 tablespoon molasses (or just another of maple/monkfruit)

  • 1/2 teaspoon vanilla extract

  • 1/2 teaspoon ground ginger

  • 1/2 teaspoon cinnamon

  • A few shakes of nutmeg or allspice

  • 2 tablespoon granulated sweetener (allulose/monkfruit/coconut sugar, etc)

  • 1.5 tablespoon coconut flour

  • Dash of sea salt

  • 1 tablespoon nut milk (nutpods is my fave!)

  • Optional: 1 serving vanilla collagen in place of the granulated sweetener!

  • Chocolate Coating: Chocolate gems (HuKitchen) or melted dark chocolate!

Steps

Step 1

Mix wet and dry ingredients separately and then mix together (I use my Kitchen Aid!). Mix until well incorporated. If the batter is too thin, add more coconut flour. If the batter is too thick/dry, add extra nondairy milk!

Step 2

By this point, the dough should be thick and easily formed. Roll into small/medium balls and place on a lined plate/tray and refrigerate or freeze until firm.

Step 3

Melt the chocolate and drizzle over balls. Freeze again to harden the chocolate (will harden in just a minute or two!)

Step 4

Serve immediately, and/or store in the fridge or freezer. ENJOY! :)

NOTES

To make the recipe sugar-free, use monkfruit maple syrup instead of pure maple syrup or molasses. Use monkfruit/allulose or a plant-based no-sugar blend for the granulated sugar. I also swap some of the sweetener for vanilla collagen (the ancient nutrition one is slightly sweet w/ monkfruit & it’s delicious). I always start w/ less sweetener and adjust to taste. If you use a plain collagen (unsweet) then you can use the regular sweetener measurements and it won’t change the flavor at all, just will add protein!
