Gut Healing Fire Roasted Tomato Veggie Soup

GUT HEALING FIRE ROASTED TOMATO VEGGIE SOUP

The fire roasted tomatoes in this are KEY! You can switch up the veggies and add different spices and/or lots of hot sauce if you would like! This is perfect to prep a big batch for the week. Add protein (like chicken) if you want, or just have it as is!

This recipe targets:

Veggies are fabulous for feeding the nice bacteria in your gut, and this soup is full of them! Add as many or as little as you like. I made this in the instant pot, but you can make it on the stove or slow cooker, as well.

Ingredient list

  • 2-3 cups of broth (I used organic chicken brother) or *bone broth for more protein/nutrients!

  • 2 garlic cloves, minced (leave out if you are low FODMAP!)

  • 1 tablespoon tomato paste

  • 2 cans fire roasted tomatoes

  • 2 cups chopped cabbage (I used purple)

  • 1/2 yellow onion (leave out if you’re low FODMAP!)

  • 2 cups chopped carrot

  • 1 cup chopped zucchini yellow or green

  • 2 medium heads of celery, chopped

  • A few handfuls of frozen or fresh spinach

  • Optional: 1/2 cup green beans

  • 1/2 teaspoon basil

  • 1/2 teaspoon oregano

  • Salt and pepper

StOVE INSTRUCTIONS

  1. Spray your pot with nonstick cooking spray. Saute your onions, carrots and garlic for 5 minutes. If you’re low FODMAP, just do carrots!

  2. Add your broth, tomato paste, fire roasted tomatoes, cabbage, green beans, celery, basil, oregano, and salt + pepper to taste

  3. Simmer for about 5-10 minutes, until all vegetables are tender, then add the zucchini and spinach, and simmer for another 5 or so minutes.

  4. I have tried different variations. Leaving out green beans and adding lots of different veggies. Use any veggie you’d like! I love it without the garlic and onion (SIBO) — but it’s great with it, too!

  5. Top with healthy HOT SAUCE, cilantro, DF sour-cream, DF cheese and a protein, like chicken, etc.

Combine all ingredients and close/lock your lid. Select high pressure, set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build. Release the pressure using a natural release method.

slow cooker instructions

Add all your ingredients to your slow cooker, and cook on low for 4-5 hours.
